Recovery cake… a big wedge of tasty loveliness to scoff straight after swimming.
Recipe by Kathy Findlay
3oz brown flour
1oz desiccated coconut
1tsp mixed spice
500g mixed fruit
2oz chopped dates
2oz chopped apricots
150g chopped almonds
½ pint water – or enough to just cover the soaking fruits
2tbsp orange juice
1) Soak the fruit in the liquid overnight
2) Add the dry ingredients
3) Bake in a 2lb loaf tin for approximately 1½ hours at 160C, covering with greaseproof paper for the last ½hr.
